I want to tell you about a bowl of food that changed my mind.
I had been eating less meat for a while, not because of any strong ideology, but because I was paying attention to how I felt after eating and the pattern was undeniable. Heavy meals built around meat left me slow and foggy. Lighter plant-based meals left me energised and clear. My body was telling me something and I was slowly starting to listen.
But I still missed the satisfaction of a meal that felt complete. A meal that did not leave me looking around for something else twenty minutes later. That particular hunger that plant-based eating had not yet answered for me.
And then I made this.
The bowl
Roasted sweet potato, cut into cubes, seasoned with smoked paprika, cumin, garlic powder, and olive oil, roasted until the edges are slightly caramelised. That is the base.
On top: black beans, warmed in a pan with a little garlic and lime juice. Then a scoop of brown rice. Then sliced avocado. Then a handful of fresh coriander and thinly sliced red onion that has been sitting in lime juice for ten minutes so it loses its sharpness.
The sauce is what does it. Tahini, lemon juice, a small clove of garlic grated in, water to thin it, and a pinch of salt. Drizzled over everything.
What it does
It is complete in a way that surprised me. The sweet potato gives you the sweetness and the substance. The beans give you the protein and the earthiness. The avocado gives you the fat that makes everything feel satisfying. The sauce ties it together.
I ate it and did not think about meat once. That was the first time I could honestly say that.
I have made variations of this bowl probably fifty times since. It changes depending on what is in the fridge. Sometimes it is roasted chickpeas instead of black beans. Sometimes it is quinoa instead of rice. Sometimes there is a fried egg on top because I am not fully plant-based and I am not pretending otherwise.
But the principle stays the same. Roast something sweet. Add something earthy and high in protein. Add fat. Add acid. Make a sauce.
Your body will not be looking for anything else. I promise you that.
